Ingredients (For 4 People)

  • 4 large onions, thinly sliced
  • 4 tbsp butter
  • 2 cloves garlic, minced
  • 1 cup white wine
  • 6 cups beef broth
  • 1 tbsp fresh thyme leaves
  • 1 bay leaf
  • Salt and pepper to taste
  • 8 slices of French bread
  • 2 cups shredded Gruyère cheese

Recipe

  1. In a large pot, melt butter over medium heat. Add onions and cook until caramelized, about 30-40 minutes, stirring frequently.
  2. Add minced garlic and cook for 1 minute. Pour in white wine and cook until reduced by half.
  3. Add beef broth, thyme, bay leaf, salt, and pepper. Simmer for 20 minutes.
  4. Preheat the oven to 400°F (200°C). Place slices of French bread on a baking sheet and toast in the oven until golden brown.
  5. Remove bay leaf from the soup. Ladle soup into oven-safe bowls. Place a slice of toasted bread on top of each bowl and sprinkle with Gruyère cheese.
  6. Place the bowls under the broiler until the cheese is melted and bubbly. Serve hot.
