Ingredients (For 4 People)

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tbsp fresh thyme
  • 1 tbsp fresh rosemary, chopped
  • 1 cup quinoa
  • 2 cups chicken broth or water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup feta cheese
  • Salt and pepper to taste

Recipe

  1. In a small bowl, mix olive oil, lemon juice, garlic, thyme, and rosemary. Marinate the chicken in this mixture for at least 20 minutes.
  2. While the chicken is marinating, cook the quinoa. Rinse the quinoa under cold water, then add it to a saucepan with chicken broth or water. Bring to a boil, reduce heat, and simmer for 15 minutes, or until quinoa is cooked and fluffy.
  3. Preheat a grill or grill pan over medium-high heat. Grill the marinated chicken for 6-7 minutes on each side, or until fully cooked.
  4. In a mixing bowl, toss the cooked quinoa with cherry tomatoes, cucumber, and feta cheese. Season with salt and pepper.
  5. Serve the grilled chicken with the quinoa salad on the side, and enjoy!
